hippie_chickHad a bit of a Mexican feast tonight. Got a new Molcajete as an early Christmas present so made YUMMY guacamole as an appetizer. Used the Rocco's Tacos recipe found here. It ended up a little too spicy so next time I'm not going to use as much of the seeds and ribs of the jalapeno pepper.
Had a Mexican casserole using this recipe. As the tortilla chips, I crushed Tostitos. The kind with a hint of lime. Perfect. As a side dish I did Mexican Fried Corn using this recipe and it was awesome.
All this because I wanted to break in my Molcajete. LOL!
